Dried Fruit and Nut Overnight Oats Parfait

I love oats. They are heart healthy (as is exercise – AHEM RECESS) and fresh fruit! A lot of time it is hard to work oatmeal into your daily routine and so this recipe lets you do all of the prep the night before so you don’t have to rush in the morning.

Total Time: 8 hrs 5 mins

Ingredients:

1/3 cup sliced almonds (divided)

1 and 1/3 cup nonfat Greek yogurt (divided)

2 tablespoons honey (divided)

2 cups Quaker Oats

1 teaspoon cinnamon

1/4 teaspoon salt

2 cups nonfat milk

1/4 cup dried apricots (roughly chopped, divided)

1/4 cup dried cranberries (divided)

Fresh mint leaves (to garnish)

Directions:

In a small dry pan over medium-low heat add almonds. Occasionally shake the pan so they are evenly toasted, about 5 minutes. Remove the toasted almonds from pan to a small bowl and set aside.

In a medium bowl, add the yogurt and honey and mix to combine. In a large bowl, add the oats, cinnamon, salt, milk and half of the honey Greek yogurt and mix to combine. Divide the oat mixture between four glasses. In a small bowl mix the apricots, cranberries, and toasted almonds. Sprinkle half of the apricot mixture evenly between each glass and top with remaining honey Greek yogurt. Wrap with plastic and refrigerate overnight. In the morning, evenly garnish with the remaining dried fruit mixture between each glass and fresh mint leaves.
